Stuffed Sweet Cherry Peppers

NOTE:  These little red and green stuffed peppers are not only attractive, but very tasty.  They make great appetizers for parties, or just anytime you want a fun food.

Ingredients:

  • 1 (16-ounce) jar Mezzetta pickled sweet cherry peppers
  • 2 slices provolone cheese, finely chopped
  • 2 slices prosciutto, thinly sliced, or 2 slices Genoa salami, finely chopped

Yield: 12 to 15 Peppers

Instructions:

1.  Drain peppers.  Using sharp knife, cut carefully around stem and remove.  With a tiny spoon, scoop out the seeds.  Mix the chopped provolone and prosciutto or salami together.  Fill each cavity of the peppers to slightly overflowing.  Place on tray with other appetizers for an attractive look.  Makes 12 to 15 peppers.
