Green Beans with Garlic Crusted Potatoes

A bowl of green beans, potatoes and asparagus.

NOTE:  These green beans are so delicious, and very easy to make.  They are a perfect side with most any entrée.

Ingredients:

  • 2 to 3 medium red or yellow  potatoes, skins left on
  • 1/3 cup mild olive oil
  • 1 teaspoon Lawry's garlic salt with parsley added
  • 1 to 2 cloves garlic, chopped fine
  • 1 pound fresh or frozen green beans
  • extra olive if needed while frying

Instructions:

  1. Wash potatoes and cut into small chunks.  Place potatoes in large fry pan with olive oil.  Sprinkle potatoes with garlic salt.  Let fry for 3 to 4 minutes while forming crust on potatoes. Add the chopped garlic.  If using fresh green beans, add them now and let them cook with potatoes until crisp tender, about 10 to 12 minutes, adding water if needed.  Salt and pepper as desired.
  2. If using frozen green beans, sauté the potatoes in the oil for about 6 to 7 minutes until crusted.  Add the fresh frozen green beans, and garlic at this time.  Season with salt and pepper as desired.  Complete frying the green beans with the potatoes until green beans are crisp tender.  Remove to serving dish and serve warm.  Serves 4 to 5 servings.
