Chocolate Sour Cream Cake with Rich Chocolate Frosting

This could be one of the best chocolate cakes ever!  Once you make it and taste the richness, it will forever be on your list of favorite cakes.  This cake recipe has been spotted in many cookbooks, one of which: The Cake Doctor. 

Ingredients:

  • cooking spray
  • flour
  • 1 box Duncan Hines Moist Deluxe Devil's Food cake mix
  • 1 package (3.9-ounce) chocolate instant pudding mix
  • 4 large eggs
  • 1 cup sour cream
  • 1/2 cup water
  • 1/2 cup mild olive oil
  • 2 teaspoons pure vanilla
  • 1 1/2 cups semisweet chocolate chips
  • Rich Chocolate Frosting
  • 8 tablespoons soften butter
  • 2/3 cup unsweetened cocoa
  • 4 cups powdered sugar
  • 2 to 3 tablespoons milk
  • 2 teaspoons vanilla

Instructions:

  1. 1 Preheat oven to 350-degrees.  Spray an 11-inch by 15-inch baking pan with vegetable or olive oil and dust with flour; shaking off excess flour.
  2. 2. Place the cake mix and pudding mix in large mixing bowl.  Stir to combine the mixes well.  Add the eggs, sour cream, water, and oil.  Blend with an electric mixer on low speed for 1 minute.  Stop the machine and scrape down sides of bowl with spatula.  Add the vanilla, and on medium speed , mix until blended well.  Remove bowl and fold in the chocolate chips: batter will be thick.  Evenly spoon batter into baking pan and place on middle rack in oven.   Bake for 30 to 35 minutes.  Cake is done when springs back with light touch.  Remove from oven and let cool.
  3. Rich Chocolate Frosting
  4.  Place butter in large bowl.  Add the cocoa and 2 cups powdered sugar.  Blend together with electric mixer until smooth; adding milk a little at a time to get a smooth consistency.  Add vanilla and mix together well.  Frost cake when cooled.  Makes 12 to 16 servings.
