Cheesecake Heaven


A cake on top of a metal stand.Thanksgiving is just around the corner, and it could be the one holiday where just sitting down at the family table guarantees a 5-pound weight gain. This could happen merely by just taking a spoonful of everything. If your family is anything like mine, then every cousin, aunt, uncle, and neighbor invited, wants to outdo the other with their best side ever!

There could be anything from Roasted Asparagus with Honey Lemon Sauce, Loaded Mashed Potatoes with Chives and Green Onions, Creamed Corn Casserole, Red Leaf Lettuce Salad with Chestnuts and Raspberries, Green Bean Casserole Supreme, Candied Sweet Potatoes, and on and on. Not to mention the fancy cranberry salads, fruit salads, plum puddings, and at least four types of dressings. One could actually eat themselves into oblivion.

I must say, I love it all, and will do my share of spreading the love. However, there are two things I have to have: a sweet hot yeast roll, and an awesome creamy rich cheesecake. One thing is certain, I must make my wonderful Sweet Yeast Rolls, and of course thePumpkin Walnut Swirl Cheesecake. If you love pumpkin pie, and a rich creamy cheesecake, then you must make this coveted dessert. It is really hard to describe, because the flavor of pumpkin is every bit dominate, but then paired with a creamy cheese filing makes it Cheesecake Heaven.

Since I know I will be working out for days after the dinner, I plan to enjoy every bite of this once-a-year feast, especially the cheesecake! Look for the recipe on my “Country Recipe” board. I wish all of you a most blessed time with your family. Laugh a lot, and don’t forget the blessing at the table, because without a doubt we are a blessed people.
