Beautiful Fresh Apple Cake with Cinnamon Walnut Streusel

October! This is the one month of the year that tells on itself descriptively. With the brilliance of the landscape bursting with color, from bushes to trees and the multicolored mums, to the cool evenings spilling over with outstanding sun-sets, one does not lack for artistry.Every year we enjoy this wonderful weather change with our hayrides, bonfires, and all the S’mores one can down in one evening. Big pots of chili and roasted hot dogs appease our palette, and we devour as though we never had a roasted hot dog or a bowl of chili.
Another way we know it is October is from the menus in our restaurants. They are filled with apples, squash and pumpkin pie. The breakfast menus could be as follows: Apple Dumpling Pancakes, Butternut Grits, and Pumpkin Pie Omelette with Caramel Oatmeal. Or how about the lunch menu complete with Pumpkin Ravioli, Apple Salad with Sunflower Seeds and Pumpkin Vinaigrette. Of course dinner menu could offer Butternut Bisque, Pumpkin Cheesecake with Apple Streusel, and even Pumpkin Ginger Cup Cakes with Butternut Jam. Everywhere we look, the fall foods overpower us, and we have to say we love it.

This cake is full of the October flavor: apples, cinnamon, walnuts, and lots of sugar crunch all wrapped around a simple yellow cake batter. Absolutely delicious!
