Italian Breaded Pork Chops

NOTE:  These pork chops may be the best you have ever had.  They are melt-in-your- mouth delicious!  Easy and quick to prepare, they are a dream on a busy night!

Ingredients:

 
  • 4 to 6 (bone-in) pork chops
  • Lawry’s coarse garlic salt with parsley added
  • 2 eggs, beaten
  • 1 cup plain bread crumbs
  • 1/3 cup grated Parmesan cheese
  • 2 cloves garlic, chopped
  • ¼ cup fresh curly parsley, chopped
  • 1 teaspoon salt,
  • ¼ teaspoon ground black pepper
  • Peppermint sprigs
  • Olive oil

Yield: Makes 4 to 6 chops

Instructions:

  1.  Rinse chops under cool water, pat dry.  Sprinkle the chops lightly with the garlic salt; set aside.   Place the beaten eggs in a shallow pie plate.  Make the breading by combining the bread crumbs, cheese, garlic, parsley, and salt and pepper.  Place the bread crumb mixture in another shallow pie plate.
  2.  Dip the chops in the egg on both sides, and then into the bread crumb mixture on both sides.  Pour olive oil in the bottom of a large skillet, and fry the chops in medium hot oil about 3 to 4 minutes on each side.  Lower the heat and put the lid on the pan.  Let the chops steam up, about another 8 to 10 minutes.   Remove the breaded chops to a large meat platter.  Garnish with peppermint sprigs.    Makes 4 to 6 servings.
